Where’s The Carrot?

Think of carrot cake and a dessert with grated carrots, walnuts, and sweet cream cheese frosting comes to mind. However, at the hawker centers in Singapore, carrot cake means something else. Fried carrot cake here refers to a savory dish known locally as chai tao kway. The name of the dish is misleading as there is no carrot in it. It consists of diced steamed cakes of rice flour stir-fried with shredded white radish, salt pickled radish, garlic and eggs. Its name originated from the fact that loi poi, the mandarin word for carrot is also used to mean radish. There are two varieties available – the dark version cooked with dark soy sauce which is much sweeter and the saltier version with more eggs and prawns. It is a popular dish for breakfast and supper. Very filling too.
